The short answer: you don't, unless you test them. "I told them already" is the most expensive sentence in an SME. Telling is broadcasting. Knowing is confirmed understanding. The signals most bosses rely on

Most owners gauge understanding by feel. The worker nodded. Nobody asked questions. The shift went fine. All three are weak signals. People nod out of politeness or fear of looking slow, especially in a workplace where they are not confident in the language of the briefing. Silence often means confusion, not competence. And a smooth shift may just mean the risky situation has not come up yet.

What a real check looks like

You do not need an exam hall. Three to five questions after a short lesson is enough, if the questions are about what the worker will actually face: "the fryer alarm sounds, what do you do first?" rather than "recite the safety policy." A worker who fails simply rewatches the lesson and tries again. No embarrassment in front of the team, no pretending, and no gap silently carried onto the floor.
